Pineapple Arugula Mojito

Ingredients:

  • 1 pineapple
  • 1 cup fresh mint leaves
  • 1 cup Dole Arugula
  • 2 limes, cut into 8 wedges
  • 1/4 to 1/2 cup brown sugar
  • 2 (6-ounce) cans Dole pineapple juice
  • 2 cups light rum
  • club soda

Instructions:

  1. Peel and core pineapple. Cut into chunks, and reserve 8 pieces. Puree the rest of the pineapple in a food processor or blender. In a large pitcher, add mint, arugula, limes, and brown sugar.
  2. Crush the leaves with a spoon, muddle it really well.
  3. Add pureed pineapple, pineapple juice, and rum. Add a good splash of club soda.
  4. Pour over ice, and garnish with pineapple chunk, mint, and more limes.

Pineapple Limeade

With summer here, there’s nothing more refreshing than a nice cold drink, and this Pineapple Limeade does not disappoint!

Ingredients:

  • 1/2 cup of sugar
  • 3 cups pineapple juice
  • 1/2 cup lime juice
  • 1 liter club soda, chilled
  • 1 lime, sliced and then cut slices in half

Instructions:

  1. In a large picture, mix the sugar and juices together and chill. You want this nice and cold.
  2. Just before serving, mix in club soda and lime slices. Serve over ice. Enjoy!  Makes 8 servings.

Margarita Jello Shots

Ingredients:

  • 12 whole limes
  • 1 cup limeade
  • 2 envelopes plain gelatin
  • 3/4 cup tequila
  • 2 tablespoons triple sec
  • 1 tablespoon sweetened lime juice
  • 1 tablespoon kosher salt

Instructions:

  1. Cut the limes in half. Scoop out the insides.
  2. Add the limeade to a saucepan, sprinkle the gelatin over the juice. Let it sit for 2 minutes.
  3. Heat the limeade over low heat, stirring, until the gelatin has dissolved, about 5 minutes.
  4. Stir in the tequila, triple sec, and sweetened lime juice. Pour into the lime halves.
  5. Refrigerate until set, about 4 hours.
  6. Cut the limes into half, sprinkle with salt, and serve.

Ingredients:

  • 1 cup pink lemonade
  • 2 packages plain gelatin
  • 1 cup vodka

Instructions:

  1. Cut the lemons in half. Scoop out the insides.
  2. Add the lemonade to a saucepan, sprinkle the gelatin over the juice. Let it sit for 2 minutes.
  3. Heat the lemonade over low heat, stirring, until the gelatin has dissolved, about 5 minutes.
  4. Stir in the vodka. Pour into the lemon halves.
  5. Refrigerate until set, about 4 hours.
